I'm going to be full on honest here, I used to hate kale! Mainly the texture is what killed me.. but then I discovered what throwing it in a pan with olive oil did to it! I could eat this stuff by the bucket full! And we all know if you add enough bacon to sand it would probably be good. So, if you've been a kale hater, this one is for you!
Keto Bacon Sautéed Kale
Ingredients:
Whole Kale Stalks (not the bag of chopped kale, I'll explain why)
Extra Virgin Organic Olive Oil
Nutritional Yeast Flakes
Bacon (with no added sugar)
One Avocado
Pink Himalayan Salt & Pepper (optional)
Take your whole kale stalks and cut the stalk away from the leafy part. I made the mistake of buying the "chopped kale" that is already in a bag once and I wasn't able to cut the stalks out.. the texture was really rough. So you'll definitely what to buy the whole stalks that are generally purchased by weight. Set the prepared greens aside.
Fry a few strips of bacon in your pan. Once they are done to the "crispyness" level you like, pull them off, set a side. Leave the bacon grease in the pain.
Turn your stove top down and put the prepared kale in the pan with the bacon grease. Your going to want to keep the kale on the move, stirring and flipping around the pan because it burns easily. Drizzle with the olive oil as you go. You'll be amazed at how the greens soak up the fats, they are like a sponge!
Sprinkle with nutritional yeast.. I actually add maybe 2 tablespoons to mine. I love the flavor it adds, plus its FULL of vitamin B!
Chop up the bacon and add it to your hot greens.
Pull everything off once the kale has wilted and the flavors are combined.
Top with a sliced avocado & sprinkle with salt and pepper if needed. (be aware that the bacon grease adds a good amount of salt) Enjoy!
